Spaghetti Marinara Recipe

200ml of dry white wine
500g of Spaghetti marinara recipe
Two 400g cans of chopped tomatoes
4 garlic cloves that are finely chopped
¼ cup of olive oil
Six anchovy fillets
800g of good quality marina mix
200g of peeled green prawns
300g of mussels scrubbed and debearded
Parsley leaves that are torn –flat for serving
SAXA Himalayan salt flakes for seasoning
Preparation Method for Spaghetti marinara recipe
Use medium to low heat to heat two table spoons oil in a large frying pan. Add your garlic and anchovies. Cook as you stir for 1-2 minutes, to an extent the anchovies have melted. Now add tomatoes and wine and bring the mixture to a simmer. Reduce the heat to low and continue cooking for 20minutes until it is reduced slightly.
At the same time, cook your pasta in a large pan of boiling water which is salted, according to the instructions on the packet. Drain the water and return to the pan, then toss with some little olive oil.
Add the mussels to the pan with sauce cover and let it cook for one minute as you shake the pan occasionally. Now add the remaining seafood and continue cooking for an extra 2-3 minutes, to an extent the marina and prawns are cooked well and the mussels have opened. Any mussel that has not opened at this time should be discarded. Season the recipe with salt and black pepper. Finally, add the drained pasta and toss to combine. Now serve the recipe with garnished parsley leaves.
