Pistachio Amoretti Recipe
After having a delicious Italian meal, you need to get the best relaxation. Amoretti and a cup of fresh espresso will give you the best relaxation. The Pistachio Amoretti Recipe is light and very lovely. Here are the ingredients and the means of preparing the recipe.
- Two egg white
- 2/3 cup of caster sugar
- Pure icing sugar
- One teaspoon of vanilla extract
- Espresso which you will use to serve
- Natural almonds, 36 in total
- Two 80g packets of unsalted pistachio kernels
Pre heat your oven to 160/140 degree Celsius by fan forcing. Then line three baking trays using baking paper.
Now blend all the pistachios and half the caster sugar, until fine crumbs are formed. Keep the mixture aside.
Beat the egg whites with an electric mixer, until there is formation of firm peaks. Then add the remaining sugar gradually. Ensure you add the sugar a tablespoon at a time, while beating until the mixture is thick and glossy. Beat in the vanilla and fold the pistachio mixture.
Put four spoons of the pistachio mixture into a large snap-locking bag. Choose one corner of the bag and snip 1cm. Then pipe 3 cm rounds which are 3cm apart onto trays. Now top each round with a single almond. Bake the biscuits until they have started turning brown. Cool them on trays, and dust them using icing sugar. Now serve the recipe with espresso.
